Boccalone Salumeria is the creation of pork love extraordinaire Chris Consentino and co-founder Mark Pastore. It’s located in San Francisco’s Ferry Building Market, Marketplace Shop #21. You may have seen Chris on Food Network and the such cooking or speaking about his love of all things pork. Chris is also known for doing amazing things with offal at his restaurant, Incanto.
Love the sign: “Boccalone: Tasty Salted Pig Parts” – it’s like music to my ears! Anyways, if you ever get to San Fran, you should visit this vast indoor food market. Boccalone has been featured on “Best Thing I Ever Ate”. Here’s a shot of the fridge that holds the dried cured meats:
I believe it was Tyler Florence that went in and got what is called the “Meat Cone” on that episode. Of course, being the huge meat eater and pork lover, I had to get it.

And for $3.50, it was a tasty bargain. I’m not totally sure what the meat was but I think it was a version of proscuitto (my FAVORITE and center), then a ring of boiled ham and then a ring of mortadello.

The place also served up some amazing looking sandwiches but I was full from another meal I had consumed earlier that day :c.
Next time I’m in San Fran!
Also that day – I sampled some oysters from the same market – the stores there set up shop like a food fair on the weekends (along with a ton of other food vendors outside and inside the market). For this particular stand, patrons come by, hand over their cash you slurp away after putting on whatever condiment you want with your oyster. Here’s the stand:
Goodness – with seafood this fresh and so accessible, I could really get used to San Fran eating!
