As I mentioned in a previous post, Half Hopi, Spiderman, Cookie Monster and I spent the weekend together at their summer home. They are also big eaters and lovers of food so it was only fitting that we decided to make fresh pasta for dinner on Saturday night! I just wanted to post photos of the pasta because we were all quite proud and the photos are stunning!
The freshly made bucatini:

The sauce: Cubed guanciale rendered in a pan…reserve some of the fat to cook chopped onions (we used sweet vidalia onions). Oven roasted cherry tomatoes sprinkled liberally with S&P and chopped garlic. Throw it in into a food processor and just add the pancetta. Toss in pasta and eat.
We also made fresh linguine:
That was only one of 3 racks that we made.
We married that with fresh clams for linguine a la vongole:
This pasta was so tender it melted in my mouth. Was my favorite!!!
DELICIOUS. Pasta is a bit of work but the results are so worth it!
